I experimented in the kitchen this weekend and made a great-tasting snack… energy balls.  They are very easy to make and packed full of all sorts of vitamins and nutrients.   


1 1/4 cup puffed rice cereal
1 1/4 cup pitted dates
3 Tbsp almond butter
2 Tbsp oats
2 Tbsp chia seeds
2 Tbsp raw cacao nibs
2 Tbsp dried cranberries
1-2 Tbsp agave or brown rice syrup (depending on how sweet you want them)
1-2 Tbsp water (start with 1 Tbsp and add more to develop a “sticky” texture to make rolling them easier)

Blend all ingredients together in the food processor.  Form into balls.  Chill and enjoy.

Makes 24 bite-size balls.
